I love Fall!
“Be patient then brothers until the Lord’s coming, ” (James 5:7 ) See how the farmer waits for the land to yield its valuable crop and how patient he is for the autumn and spring rains.
I know we are all patiently awaiting the Lord’s return but it sure is nice that while we are here on this earth that He gives us something to look forward to along the way. One thing I look forward to each year is the autumn season. I love fall! I love football, apple cobbler, pumpkin muffins, big pots of soup, mums, leaves changing, hot chocolate etc… I love all the fall colors and what this season is all about. It is a great time of year and brings in some great weather to enjoy too! My favorite time of the year is when I can wear a big sweatshirt to the games but I don’t have to wear a coat yet! I also love sitting around an outdoor fireplace at my friends house or our fire pit and enjoying making s’mores. Ok can you tell I am fired up for fall! God is so good to give us the fall to enjoy especially in Tennessee!! I thought I would start off the season by sharing some fall recipes with you:
Chocolate Chip Pumpkin Bread
3 cups sugar
1 cup water
1 cup vegetable oil
3 eggs
1 lb canned pumpkin
3 1/2 cups flour
1 tsp salt
1 tsp ginger
1 tsp nutmeg
1 tsp allspice
1/2 tsp baking powder
1/2 tsp cloves
2 tsp cinnamon
2 tsp baking soda
1 bag chocolate chips
In a bowl, mix sugar, water, oil, eggs and pumpkin. In separate bowl, mix flour, salt, ginger, nutmeg, allspice, baking powder, cloves, cinnamon and baking soda. Add moist ingredients to the dry ingredients until moistened. Do not over mix. Fold in chocolate chips. Pour in 9×5 loaf pans and bake 1 hour at 350. Makes 3 loaves. You may put in muffin pans and bake for 350 for 15 min. and makes about 3 dozen muffins. Enjoy!!
Cheese Potato Soup
3 large potatoes, chopped
1 large onion
1 1/2 cup of water
2 chicken bouillon cubes
8 oz. Velveeta cubes
1/4 cup real bacon bits
Combine potatoes, onions, water and chicken bouillon cubes. Boil for 10 min. Add Velveeta and top with bacon! I sprinkle bacon on top as I serve bowls also.
Apple dip
1 8 oz. cream cheese
1/2 cup unsalted peanuts ( add last crushed up)
1/2 cup brown sugar
1 Tablespoon white sugar
1 tsp vanilla
Mix all together and serve with yellow, red and green apple slices. Nice fall appetizer!
